Love is in the air and the calories are flying around faster than cupid's arrows. Shortbread are a classic Valentine's Day treat where I work and every year I make these jam shortbread hearts. Shortbread is insanely easy to make and this recipe is even easier than most as it doesn't need to be refrigerated before it is rolled out. I use a homemade raspberry jam for this recipe but use whatever you want! Punch the heart center out when the cookies are sitting on the baking tray so they don't break or warp and avoid touching the cookies as your fingerprints will show up (use a palate knife or spatula).
Jam shortbread cookies
1 lb butter, softened
1 cup icing sugar
2 tsp vanilla
4 cups all-purpose flour
pinch of salt
Jam
Directions
Preheat your oven to 350 degrees Fahrenheit. Line your baking pans with parchment paper.
Using a mixer cream together the butter and icing sugar. After the butter and icing sugar has mixed for a few minutes add the vanilla. Scrape down the sides of the bowl and mix until incorporated. Whisk the salt into the flour and gradually add to the butter mixture.
Use
the dough immediately so it doesn't dry out. Sprinkle your surface with
flour and with a rolling pin, roll until
the dough is about an 1/8 of an inch thick. Press the cookie cutter into the dough and place on a baking pan, with a palate knife or spatula. Punch out the centers on half of the cookies.
Bake for approximately 8 minutes or until the edges of the cookies are
lightly browned.
wow, thanks for the recipe I've been looking all over the internet but none had such good looking ones like you ! :)
