Oh macadamia nuts, I'm sorry. For so long I've overlooked you but that's all over now I promise. These cookies are amazing! I love the huge crunch of the nuts and the cookies themselves are really soft and have a great flavour from the butterscotch. This recipe will make about 1 1/2 dozen cookies.
Macadamia and butterscotch chip cookies
1/2 cup butter, softened
1/2 cup brown sugar
1/4 cup white sugar
1 tsp vanilla
1 egg
1 1/8 cup all-purpose flour
1/4 tsp baking soda
pinch of salt
1/2 cup raw macadamia nuts, coarsely chopped (plus 18 extra nuts to top the cookies with)
1/2 cup butterscotch chips
Directions
Preheat your oven to 350 degrees Fahrenheit. Line two baking sheets with parchment paper.
Sift together the flour, salt and baking soda and set aside.
Using a mixer, beat the butter and sugars together until creamy. Add the egg and vanilla. Scrape down the sides of the bowl and continue to mix for a couple minutes.
Gradually add the flour mixture. Fold in the nuts and butterscotch chips.
Roll the dough into 1 1/2 tablespoon sized balls. Do not press the cookies down. Place a macadamia nut into the top of each cookie.
