My niece just turned 4 and for her birthday party I made a My Little Pony cake. I didn't tell her that the cake was rainbow inside and her face was priceless when she saw it. It was actually really simple to make and looked amazing.

What an absolutely fantastic cake for a little girl! The interior rainbow aspect is priceless. (Were the ponies on the cake fondant???) The whole thing is really wonderful.

Your niece is too cute. I love the idea of a rainbow cake. Amanda from i am baker has done that and I love how it looks.
