These
lemon lime cupcakes from Canadian Living are a sweet little treat great for the
summertime. I love eating them warm from
the oven dripping with my own lemon – lime glaze.
Lemon Lime Cupcakes
1/2 cup butter, softened
3/4 cup sugar
2 eggs
1 tbsp each lemon and lime zest
1/2 tsp lemon juice
1 1/4 cups all-purpose flour
1 tsp baking powder
1/2 tsp salt
3/4 cup milk
Lemon Lime Glaze
1 1/3 cups icing sugar
1 tsp lemon zest
1 tsp lime zest
1 tbsp lemon juice
1 tbsp lime juice
DirectionsPreheat your oven to 350 degrees Fahrenheit. Grease and line a standard muffin tin.
In a bowl, whisk together flour, baking powder and salt.
In a large bowl, beat butter with granulated
sugar until fluffy. Beat in eggs, 1 at a time. Add lemon and lime zest and
lemon juice and mix.
Add the flour mixture alternating with the milk, making 3 additions of dry ingredients and
2 of milk. Spoon evenly into the muffin tin.
Bake for 20-25 minutes or until a cake tester inserted in center comes out
clean.
Transfer to rack and let cool.
