This dough is great for making loaves of white bread, cinnamon buns, chocolate bread, raspberry twists, hot cross buns, cheese buns, and pizzas. You can leave out the egg and butter if you are vegan and substituting honey for the sugar would work nicely as well. This recipe will make 3 1/2 pounds of dough which is perfect for 3 medium sized pizzas. The dough freezes really well.
Basic white dough
1 cup, 2 % milk
1/4 cup butter
1 cup lukewarm water
1/4 cup sugar
2 eggs
1/2 tsp salt
2 tbsp instant yeast
5 1/2 cups all-purpose flour
Directions
Place the milk and butter in a heat proof bowl and microwave on high for 2 minutes. Add the 1 cup of lukewarm water to the milk mixture. Add the sugar and yeast to the liquid, mix and let stand for approximately 5 minutes or until the yeast becomes frothy.
In a large bowl combine 2 cups of flour with the salt. Make a well in the middle of the flour and crack the eggs into it. Pour the liquid into the well and mix. Turn the dough out onto a flat surface to begin kneading, gradually adding the remaining flour as you knead the dough. Knead the dough for 5 minutes until it is smooth (if the dough is still sticky you can knead in a little more flour). Cover and set aside to rise.

Hi, you say the dough freezes really well, at which point do you freeze it, before it rises or after?

You can definitely use a kitchen aid for this recipe, however I would halve the recipe as it may make a bit too much for the bowl.
